Turkey Tetrazzini




8 oz. Spaghetti or other pasta dash pepper

3 T. butter 1-2 c. chopped broccoli

6 T. flour 3 c. cooked turkey or chicken, cubed

3 c. chicken broth 1/2 c. grated Parmesan cheese

1 c. milk 1/2 c. shredded cheddar cheese

1 t. salt


Cook spaghetti. Cook broccoli until tender. In a small saucepan melt butter. Mix in flour. Add broth and milk. Cook until thick and bubbly. Add salt and pepper. Put spaghetti, broccoli, chicken, and sauce in a 9x13 pan. Sprinkle cheeses on top. Bake at 350 degrees for 30 minutes.

I make lots of pasta and I double the sauce ingredients.

Raspberry oatmeal cookie bars

1/2 cup packed light brown sugar
1 cup all-purpose flour
1/4 teaspoon baking soda
1/8 teaspoon salt
1 cup rolled oats
1/2 cup butter, softened
3/4 cup seedless raspberry jam

  1. Preheat oven to 350 degrees F (175 degrees C). Grease one 8 inch square pan, and line with greased foil.
  2. Combine brown sugar, flour, baking soda, salt, and rolled oats. Rub in the butter using your hands or a pastry blender to form a crumbly mixture. Press 2 cups of the mixture into the bottom of the prepared pan. Spread the jam to within 1/4 inch of the edge. Sprinkle the remaining crumb mixture over the top, and lightly press it into the jam.
  3. Bake for 35 to 40 minutes in preheated oven, or until lightly browned. Allow to cool before cutting into bars.

I doubled the recipe and put it in a 9x 13 pan with a jar of raspberry simply fruit (10 0z.)
I used my hands, you have to make sure you mix the butter flour mixture very thoroughly.
