Yummy Hamburger and Pasta Bake

This is a very easy recipe and my children loved it!

16 oz. pasta (penne works best, but any kind will work)
1 jar Spaghetti Sauce
Hamburger
Cheese

Cook pasta according to package directions. Place in a 9x13 pan. Mix spaghetti sauce and cooked hamburger together and pour over the top. Sprinkle cheese on top and bake for 20 min at 350 degrees. (Whenever I get hamburger, I immediately brown it and put it in 1 lb. freezer zip lock bags, so whenever I have a recipe call for hamburger, it takes no time to just defrost and add. Also, I'm not a big fan of canned spaghetti sauce, so I always make the western family dry mix up and my children seem to like that the best, but I know the other will work!)

Hot Chicken Salad

6 c. cooked chicken, cut up
5 c. chopped celery
1 c. slivered almonds
2 tsp salt
3 1/4 c. mayo
1 bottle pimento
2 T grated onion
2 c. crushed potato chips
1 c. grated cheese
1 1/2 tsp. lemon juice
1/3 tsp pepper

Mix everything but the potato chips together and place in a greased 9x13 pan. Sprinkle chips on top. Bake at 350 degrees for 30 minutes. Feeds 12-15 people. This is the meal my Mom and I make every year for the Junior Miss luncheon with the judges. It is really delicious, but takes a little bit of time to make. The pinento's add color, but I'm not sure if there is any flavor value--I wouldn't make this without them. We serve it with a roll and green salad with strawberries, nuts and poppyseed dressing. We then serve a chocolate dessert with whipcream and a cherry on top! Everyone raves about it!

Bow Tie Chicken Salad

This chicken salad is also awesome and is best all by itself rather than on a croissant or other roll. This may also be the recipe that Dianna wants! This recipe feeds 25 to 30 people!

Stir together:
1 lb. bow tie pasta (cooked)
3 c. apples, diced
3 c. celery, chopped
red and green grapes (1/2 or 1/4)
3/4 to 1 c. salted cashew nuts
1 can pineapple chunks (drain out juice)
5 chicken breasts (boiled, cubed, I cook mine w/ celery salt and minced onion)

(Mix together and add just before serving)
1 1/2 c mayo
1/3 c sugar
3 T apple cider vinegar

Stir everything together and then coat with the last 3 ingredients just before serving. It's really good!

Chicken and Grape Salad

This salad can be eaten alone or on croissants. It is delicious and a request from Dianna.

Cooked chicken - cubed or shredded (I like cubed)
Green and Red grapes (cut in to 1/2 or 1/4)
Celery - chopped
Sliced almonds - optional
Mayo (enough to coat the chicken, celery and grapes)
Laury's seasoning salt to taste (a little goes a long way!)

Mix together and chill in fridge at least 1 hour before serving. It really is that easy!

Divine Drumsticks

The meat on these drumsticks is wonderfully delicious and will totally fall from the bones when eaten! It's super easy and a huge crowd pleaser. You can also make as much as you need and the directions are exactly the same!

Fresh chicken drumsticks (use as many as you need and you can use frozen drmsticks!)
Masterpiece Barbecue Sauce (I'm sure whatever favorite barbecue sauce you have will work!)

Place drumsticks in a deep casserole dish. Pour barbecue sauce over all drumsticks. I do not cover the dish. Place in the oven at 275 degrees for 7-8 hours. Gobble up!!

How easy is that!! Enjoy!

Turkey Tetrazzini




8 oz. Spaghetti or other pasta dash pepper

3 T. butter 1-2 c. chopped broccoli

6 T. flour 3 c. cooked turkey or chicken, cubed

3 c. chicken broth 1/2 c. grated Parmesan cheese

1 c. milk 1/2 c. shredded cheddar cheese

1 t. salt


Cook spaghetti. Cook broccoli until tender. In a small saucepan melt butter. Mix in flour. Add broth and milk. Cook until thick and bubbly. Add salt and pepper. Put spaghetti, broccoli, chicken, and sauce in a 9x13 pan. Sprinkle cheeses on top. Bake at 350 degrees for 30 minutes.

I make lots of pasta and I double the sauce ingredients.

Raspberry oatmeal cookie bars

1/2 cup packed light brown sugar
1 cup all-purpose flour
1/4 teaspoon baking soda
1/8 teaspoon salt
1 cup rolled oats
1/2 cup butter, softened
3/4 cup seedless raspberry jam

  1. Preheat oven to 350 degrees F (175 degrees C). Grease one 8 inch square pan, and line with greased foil.
  2. Combine brown sugar, flour, baking soda, salt, and rolled oats. Rub in the butter using your hands or a pastry blender to form a crumbly mixture. Press 2 cups of the mixture into the bottom of the prepared pan. Spread the jam to within 1/4 inch of the edge. Sprinkle the remaining crumb mixture over the top, and lightly press it into the jam.
  3. Bake for 35 to 40 minutes in preheated oven, or until lightly browned. Allow to cool before cutting into bars.

I doubled the recipe and put it in a 9x 13 pan with a jar of raspberry simply fruit (10 0z.)
I used my hands, you have to make sure you mix the butter flour mixture very thoroughly.

Au' gratin Potatoes

9 medium potatoes
1 chopped onion

Sauce:
2 Tb. flour
1/2 lb. cubed velveeta cheese
1 pt milk
1 cube butter
1 Tb. chopped dry parsley
1 1/2 tsp. salt
1/4 tsp. pepper

Boil potatoes in jackets, then cool and cube. Pepare white sauce. When thickened add parsley salt and pepper. Add cheese and keep warm until cheese melts. Sprinkle onion over cubed potatoes and pour sauce over potatoes.Cook 350 for 20 minutes.

Meat Loaf

1 lb.ground beef
3/4 c. rolled oats
1/4c. onion
1 1/2 tsp.salt
1/4 tsp. pepper
1 egg
1/4 c. milk

Sauce:
2/3 c. catsup
4 Tb. brown sugar
2 Tb. mustard

Pour sauce over mixture and bake 45 to 60 minutes @ 350

I suggest doubling this for a larger family. My family will eat this entire dish with no left overs.

Healthy Wholewheat Pancakes

1 cup wholewheat flour
2 tsp. baking powder
1 T. sugar
1/2 tsp. salt
1 cup milk
1 egg
2 T. veg. oil

Combine all ingredients and beat until well-mixed. Bake on a hot griddle and serve with fruit or syrup. YUMMY!

Delicious Whole Wheat Waffles

I like to grind wheat that you get from the cannery, but you can use whole wheat flour too. I think you would just reduce the amount of milk.

Into blender, pour:

1 cup wheat
1 cup milk

Blend for 5 min. or in a vitamix blender, it takes 1 min. or less.
Then add:

1/2 cup milk
1/2 tsp. salt
1 T. baking powder
2 eggs
a little less than 1/2 c veg. oil

Blend til mixed. Pour onto a hot waffle iron. Eat and Enjoy! I triple this recipe for our family and sometimes that's not enough, because they love them so much!

Annie's Muffins

Yummy, healthy and best of all easy!

1/2 c butter
3/4 c brown sugar
1 c purre fruit (apples, peaches, anything you have)
1 1/2 c whole wheat flour
1 tsp soda
1/2 tsp salt

Mix together, spoon into muffin tins. Bake @ 350 degrees for 18 min. Eat and enjoy!

Southwest Porkchops

This is the easiest recipe I've ever done for pork chops. They literally just fall apart when you eat them.

6-10 pork chops
1 can (27 oz) kidney beans
1 can (15 oz)black beans
2 cups salsa

Place all pork chops in the crockpot. Pour beans and salsa over the top. Cook on high for 5 - 6 hours. Eat! If cooked on low, they'll need 10-12 hours. No need to brown them first or anything!

(You could easily make this recipe smaller). The kids were frightened by the look of the beans and salsa, so I served only the pork chops with rice and corn as a side dish and they were so delicious and so easy!

Rolls

These are the rolls that I made for Thanksgiving. I promised to post this and forgot until my 'subconscious' (aka Dianna) reminded me. :)

The recipe is:

3 cups scalded milk, cooled
1 cup shortening
1 cup sugar
4 eggs
4 teaspoon salt
3 tablespoon yeast
1 cup warm water
13-14 cups flour

Scald milk and pour into mixer. Add sugar, salt and shortening. In another bowl put 1 cup warm water and yeast. Let brew. When yeast is ready. Add to mixer. Add eggs and half the flour. Mix well. Continue adding flour until dough pulls away from sides. Place dough in greased bowl. Cover. Let raise 1 1/2 hours. Punch down. Raise another 30 minutes. Roll out and follow directions above. Raise 1 hour or until double. Bake at 350 for 15-20 minutes.


This recipe makes A LOT! You can cut the recipe in half if you’re not making them for a big crowd. I will even fourth it if it’s just going to be for my family and it still gives us leftovers. Enjoy!

note: It also works great for cinnamon rolls. I roll it out about 1/2 inch thick and pour melted butter on it. Then add sugar and cinnamon on top of the butter. I cut it in about 1 inch strips with a pizza cutter and roll them into a circle placing them on a greased cookie sheet just touching each other. Raise and bake.

Icing: 1 cube butter melted. Add enough powdered sugar thinned with a little milk until spreading consistency.

Baked Chimichangas

1 can refried beans
2 c cooked shredded meat
1 can sliced olives
1 can diced green chillies
3 c coleslaw (I just cut up cabbage, and yes Paige can still discover it!)
1 c sharp shredded cheese
1 c salsa
8 tortillas
mix together spread on tortilla roll up and bake for 20 min at 375
top with green chilli salsa, sour cream, and quacomole.


Shredded pork
1 c salsa
1 c brown sugar
1 c sprite
2 pork tenderloins

Scones

2 T yeast
1 C warm water
6 TB Butter
3 eggs
7 c flour
1 c milk ½ c sugar
1 t salt
combine yeast sugar water
combine all other ingrediants in another bowl
mix together

granola

3 1/2 cups oats
2 cups oat bran(I just blend oats)
2 T powdered milk
1/2 cup honey
1/3 c oil
Combine oats, oat bran, and milk powder
Microwave honey and oil for 1 min pour over mixture
(I think it works best to use a bosch or a kitchenaid and mix dry ingredients well and then while it is mixing slowly pour over the honey and oil mixture.)
I think this tastes better baked in a casserole dish vs. a cookie sheet. I always make a double batch and bake nuts in one of them. Bake 60-70 min at 250 stirring two to three times. The granola will harden as it cools. It is good to throw in some raisins or coconut after it is cooked.
